My sister Christine first introduced me to these delicious bars.
Honestly, Christine is an amazing cook and baker.
Eating at her house for dinner is like eating in food heaven!
Seriously.
There’s always crazy~crazy delicious food and lots and lots and lots of it!
Everyone leaves her house absolutely stuffed and totally, blissfully happy.
I wish I could invite all of you guys over to her house for dinner! LOL
I don’t know when Christine first started making these Fluffernutter Rice Krispie Treats, but I had them for the first time this summer.
She served them at a family barbecue.
She always doubles the recipe and makes them in a 9X13 inch baking dish.
Now she’s become famous for them and every family event we have she is absolutely required to bring them!
These bars are rich, sweet, crunchy and deeelicious!
Even when Christine makes here standard double batch this whole pan gets devoured by the family.
Let me tell ya, my other sister Alise gets down right dangerous if she doesn’t get at least two rather large pieces of the fluffernutter rice krispie treats.
Luckily for me, she’s smaller than I am, so I can at least hold my own and defend myself if someone just happens to forget to save her that second piece!!!!
Recipe Notes:
Be sure to stir everything really well after you add the cereal.
The mixture is very thick and requires a bit of muscle.
If you don’t dig down to the bottom of the mixture, as the bars cool, there will be parts that don’t get covered with marshmallow coating.
The first step in the directions calls to line the pan with aluminum foil.
This creates a sling which allows you to easily remove the entire batch of Fluffernutters for easy cutting.
You can skip this step if you’d like and just butter the baking dish.
Once everything is mixed and poured into the prepared pan, you’ll need to smooth out the top of the bars.
I find the easiest way to do this is to use the wrapper from a stick of butter and simply press the mixture flat.
If you don’t happen to have one, you can butter the back of a sturdy metal spatula or a piece of aluminum foil and use either to press the top flat.
The original recipe call for using 2-8 ounce bags of the Reese’s Mini peanut butter cups.
Frankly, I find these bars to be even better with just one bag.
I’m generally a, “more is better!!!” kinda gal, but in this case, I think the second bag is too much.
You don’t enjoy the fluffernutter rice krispie part of theses bars as much with the double bag of peanut butter cups, in my humble opinion.
By the way, if you shop at Trader Joes, they also carry a carton of unwrapped mini peanut butter cups that I’ve used successfully.
The original recipe also calls for adding 10 ounces of regular sized marshmallow plus 1 1/4 cup mini marshmallow mixed in off heat.
I’m definitely in the, “more is better camp” on the marshmallow front.
I love the extra ooey gooey factor more marshmallows bring, so I add 2-3 more ounces of the regular marshmallow.
I also like more mini marshmallows so I increase the amount to 1 3/4 cups.
Fluffernutter Rice Krispie Treats
- Prep Time : 20 minutes
- Yield : Serves 8-12
Ingredients
- Regular Sized Marshmallows - 12 Ounces
- Butter - 1/4 Cup
- Creamy Peanut Butter - 1/2 Cup
- Rice Krispies Cereal - 5 Cups
- Mini Marshmallows - 1 3/4 Cups
- Reese's Peanut Butter Morsels, Melted - 1-10 Ounce Bag
- Mini Peanut Butter Cups - 1-8 Ounce Bag
Instructions
1. Line an 8X8 inch square baking dish with aluminum foil, allowing two opposing edges to overhang 2 inches. Spray with nonstick cooking spray or coat with butter.
2. In a large pan, over medium heat, melt the butter. When butter is completely melted, turn heat to low and add the 12 ounces of regular size marshmallows. Stir frequently until the mixture is smooth and marshmallows are completely melted.
3. Take the pan off the heat and add the peanut butter and stir until it's completely incorporated. Add the Rice Krispies and stir until the cereal is evenly coated. Add the mini marshmallows and fold to mix evenly.
4. Pour mixture evenly into prepared pan and using a buttered, heavy duty metal spatula, gently even out the top.
5. Evenly spread the melted peanut butter morsels on top.
6. While the morsel layer is still hot, sprinkle the mini peanut butter cups evenly over the top and gently press them into the melted morsel layer.
7. Allow the bars to cool and set completely, then cut and serve.
